Slow cooker potato, corn, red pepper chowder with corn bread

Perfect for a rainy friday …

What better than an easy slow cooker meal! I’m often asked about my favourite slow cooker recipes and thought the blog would be a good place to share them. The less time I have to make a healthy home cooked meal I have realized what a great resource my slow cooker is!

Sautee: extra virgin olive oil, 1 chopped yellow onion, 3 chopped celery stalks, 3 husks off corn off the cob, 1 chopped red pepper with sea salt & pepper.

Add to the slow cooker with chicken stock (I make up Gluten free stock from GF Bouillon cubes), use what you like – 1 container.

Add 2 large baking potatoes cut into cubes. Cut up and add chopped carrots.

Put onto low heat for 4-6 hrs.

Half an hour before you want to eat, add 1 can of evaporated milk – will make it like a cream soup without the CREAM 😉

Going GF means that although i’d LOVE to be dipping a loaf of french bread in my soup … i can’t … so i settle for a yummy corn bread. I was short on time so I used a Red Bob’s mill GF cornbread mix. Was delicious and the whole family loved it!
